Glossary:

Chimichurri: 
A delicious Argentine style sauce that is made with extra virgin olive oil, parsley, oregano, garlic, and onions.
Congri or Moros: 
The word Moros means Moors. Most Cubans refer to this dish as Moros and Cristianos. It is a mixture of black beans and white rice cooked together.
Maduros: 
Perfectly ripened plantains fried to sweet perfection.
Mojito Sauce: 
Our own original recipe consisting of oil, vinegar, and garlic. It's great with vegetables like tostones and yuca. It also makes a great marinade.
Plantain: 
Large jungle bananas. Latinos love these members of the banana family at all stages of their growth; the skin can range from green to ripe, even to the point of blackness. In all their forms they are the perfect introduction, accompaniment, or ending to any Latin meal.
Sofrito: 
A combination of lightly sautéed vegetables that is the foundation of many Cuban and Puerto Rican dishes. The combination must include at least two of the three most essential ingredients: onions, garlic, or green peppers. Tomatoes are frequently added as well as herbs and spices.
Tostones: 
Twice fried green plantain patties.
Yuca: 
Yucca or Cassava. This root vegetable was one of the staple foods that nourished Cuba's native Siboneyes Indians.
